CHICKEN FRIED RICE a simple #fridayfakeaway this week, I am so tired and fancied an easier meal this week. So a simple one pot dinner was needed! This recipe made 4 portions For the chicken - 500g diced chicken breast - Tbsp garlic granules - Tbsp soy sauce - Tsp rice vinegar For the rice - 240g dry rice (I weigh the rice before it’s cooked and do 60g per portion, I cooked this in advance) - 3 whisked eggs - 1 diced onion - 100g frozen peas - 70g finely diced carrot - Crushed garlic cloves - 2-3tbsp soy sauce - 2tbsp sesame oil Add chicken to a bowl and mix with the other ingredients, then cook in a frying pan on a high heat for a few minutes each side so it’s cooked through. Set chicken to one side, then add your veggies and cooked until they are soft, then push this to one side and add the eggs to the pan, once they start to cook give them a scramble with a spoon and mix with the veg. I then added the cooked rice, soy sauce & sesame oil to the rice and give this a good stir, fry for a few mins before adding the chicken back to the pan. Then leave for 2-3 minutes until the rice is piping hot and ready to serve! 15 minute Airfryer fried rice 🤌 The easiest recipe for when you just can’t be bothered to cook but you want to eat healthy Ingredients for one: 1/2 microwave rice 150g of raw chicken breast 2 tbsp of light soy 3 tbsp of egg white 1/4 cup of peas and sweetcorn 1 spring onion , sliced Sauce of your choice 1/4 pepper , slices Chicken seasoning Method: 1. Slice the chicken and add the seasoning and soy sauce 2. Air fry for 6-8 mins minutes 3. Add the sweet corn, peas, pepper, onion and rice. Mix in the egg white and then air fry for 5 minutes 4. Fry on high for 2-3 minutes. Combine: Add eggs back, mix everything together, and season with salt and pepper. KOREAN CHICKEN & EGG FRIED RICE 🌶🍜 514 cals per portion For the chicken - 2 chicken breast (around 300g) - 30g panko breadcrumbs - Tsp paprika, onion & garlic granules, salt and pepper - 50g egg whites or 1 whisked egg For the sauce: - 1tbsp sesame oil - 2tbsp honey - 3tbsp soy sauce - 2tbsp gochujang paste - 1tsp sriracha - 1tbsp rice vinegar For serving: - sesame seeds - Spring onion Cut the chicken into small pieces, and coat this in the seasoning. Then dip each piece in some whisked egg and then in the breadcrumbs and repeat until all the chicken was coated. Cook in airfryer for 12-15 mins at 180. Once the chicken is cooked, add the sauce ingredients to the pan. Once the sauce reduces slightly looks sticky, reduce the heat of the pan and just leave to simmer. Egg fried rice: - 120g dry rice - 50g frozen peas - 1/4 small diced onion - Tbsp soy sauce - Tbsp sesame oil - 1 egg whisked - Tsp gochujang paste I boil the rice, then let this drain off and leave to one side. This works best with day old rice, or if you cook on the same day make sure it’s completely cooled and the steam has gone otherwise it will make the fried rice stodgy and soggy! Add the veggies to a wok, once soft mode to one side. Add in the egg and use a spoon to scramble this, once the egg has cooked add the cooked rice.
