I could eat these every. single. day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Made with gluten-free oats and maple syrup for a refined sugar-free treat, this healthy breakfast has been one of my favorites lately. Mix the oats in just 5 minutes, store them overnight, and enjoy in the morning! Every bite is full of light, fluffy, creamy cinnamon roll oatmeal deliciousness! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Overnight Oats ▢ 1 cup rolled oats ▢ 1-2 Tablespoon almond butter ▢ 1 1/2 teaspoons ground cinnamon ▢ 1 teaspoon vanilla extract ▢ 2 Tablespoons maple syrup ▢ 1/2 cup vanilla Greek yogurt ▢ 1/2 cup milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀ "Icing" (optional) ▢ 1 Tablespoon sugar-free white chocolate chips (or regular white chocolate chips) ▢ 1/2 teaspoon coconut oil ▢ 1/2 Tablespoon vanilla Greek yogurt ▢ extra cinnamon on top ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Divide the oats, almond butter, cinnamon, vanilla, maple syrup, Greek yogurt, and milk between two jars or containers. Mix until evenly combined. Melt the white chocolate chips and coconut oil together for about 30-45 seconds in the microwave, stirring often. Let cool slightly, then slowly mix in the yogurt. Drizzle over each jar and add the lids. You’ll find ingredient details and nutrition info there! 🙂 Ingredients: ½ cup rolled oats, I use @Bob’s Red Mill ½ tablespoon chia seeds ½ cup blueberries ½ cup milk of choice ¼ cup vanilla greek yogurt or Skyr, I use @siggisdairy 1 tablespoon maple syrup ½ teaspoon vanilla extract 1 tablespoon low fat cream cheese For Topping: ½ cup blueberries ½ teaspoon chia seeds squeeze of lemon juice Directions: • Make the blueberry cheesecake “milk”. In a blender or food processor. Blend your favorite milk, Greek yogurt, vanilla extract, maple syrup, cream cheese, and half the blueberries (¼ cup). Set aside. • In a mason jar or other container with a lid, combine rolled oats with chia seeds and remaining blueberries (¼ cup). Pour the blueberry cheesecake “milk” on top. Give it a good stir. • Cover and refrigerate overnight or at least for 4 hours to let the oats soak. (Optional Blueberry Compote Topping) •Heat blueberries in a skillet on medium heat for ~5-7 minutes. Mash the fruit a bit to let them release some juice. Remove from heat and add chia seeds and fresh lemon juice. Add on top of the oat mixture. 👉🏼Dietitian tip: Oats contain a dietary fiber called beta glucan which may help lower cholesterol levels, can help support your digestive system, and stabilize blood-sugar levels. Just a half cup of oats contains around 15% of your daily fiber intake for the day and 5 grams of protein.
